Simple Sweet Potato Casserole

Sue Jones with Brinkoetter and Associates, Realtors would like to share one her family Thanksgiving recipes with us - Simple Sweet Potato Casserole!

This recipe is very easy and doesn't take up a whole lot of your time - which is great for Thanksgiving Day when you have several dishes to cook!

 

 

Ingredients for Casserole:

-6 large sweet potatoes

-1 stick of butter

-1 cup brown sugar

-1/2 teaspoon of salt

-2 teaspoons vanilla

 

Ingredients for Topping:

-1/2 cup brown sugar

-6 tablespoons of flour

-3 tablespoons of butter (room temperature)

 

Directions:

-Bake sweet potatoes at 400 degrees for an hour or until a knife can be easily inserted. Let cool until able to be peeled by hand.

-While potatoes are baking, mix together ingredients for topping. Use a fork to make a coarse topping.

-Mash sweet potatoes while warm and add butter, sugar, salt, and vanilla.

-Place in buttered 9x13 pan.

-Sprinkle topping over the top.

-Bake at 350 degrees or about 30-35 minutes.
