National Chocolate Cupcake Day!

 

 

Here is the recipe from Baker Andi Arnold at Giggles!

 

Single Serve Chocolate Cupcake in a mug (to hold you over until the Giggles Bakery Opens)

 

3 tbsp all purpose flour

2 tbsp brown sugar

2 tsp cocoa powder

1/4 tsp baking powder

3 tbsp milk

1 tbsp veg oil

1 drop of vanilla extract

However many chocolate chips you like

 

Mix all together in your favorite mug until smooth.  Add chocolate chips once mixed.  

Microwave on high for 45 seconds.  Let stand for 5 minutes to finish cooking and cool

 

The beauty of this recipe is you can really tweak it a ton of ways to make it your own.

Easily made into vegan by substituting almond or coconut milk.

Add Hazelnut or peppermint or coconut extract instead of vanilla.

Mix up 2 tbsp powdered sugar, tsp cocoa powder and 2 tsp water for a nice chocolate glaze. 

Add a dollop of whipped cream,  a dollop of peanut butter, a sprinkle of cayenne pepper.. heck add a pickle if your pregnant :)

 

I personally just like to add lots of dark chocolate chips and then it's like a lava cake.
